Adding a Stout such as Guinness to a cake adds intense moisture & offsets the sweetness with a touch of bitterness.
You will need:
- 250ml Guinness
 - 250gms butter (unsalted)
 - 75gms cocoa powder
 - 400gms caster sugar
 - 150ml sour cream
 - 2 large eggs
 - 1 Tbs vanilla extract
 - 275gms plain flour
 - 2.5 tsps baking soda
 
For the icing:
- 300gms of cream cheese
 - 150gms of icing sugar
 - 2 tsps of cornflour
 - 125mls of cream
 
To make:
- Preheat the oven to 180°C and butter & line a 23cm cake tin
 - In a saucepan, add the Guinness & butter & heat gently until the butter is melted. Whisk in the sugar & cocoa & remove from the heat.
 - In a seperate bowl, beat the sour cream, eggs & vanilla. Add the Guinness/butter mix + flour & baking soda & stir until combined.
 - Pour the batter into the greased & lined tin & bake for 45-60mins. Leave to cool completely in the tin.
 - Beat the cream cheese, icing sugar, cornflour & cream until you have a spreadable consistency.
 - Ice to resemble the froth on top of a pint.
